I recommend getting a trail guide to the area and a good map. This will help you decide where you want to go. The hot spring thing is overblown. One interesting trailhead is Bouchers Gap. You can drop into the Little Sur canyon and hike to a number of places; or do a ridge hike east to Commings camp or Pats Spring.
