I'm a big fan of Prewitt Ridge camp, on the south coast ridge road. It's probably more than an hour from Monteray, but well worth it. Spectacular views of the ocean on a clear day, but it's definitely susceptible to weather.

Even farther from Monteray, but a great place to spend the weekend with your lady, is Willow Creek. The VWA had a big cleanup project there the other year, along with a fun get-together. Head up Willow Creek road (just north of Gorda), and after about 2 miles, there will be another road to the left - 4WD highly recommended. Take that to the end, and you'll find yourself on a flat in the redwoods with a quick walk to the creek.
